  • 2 tbsp olive oil
  • 2 cups fresh mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (thinly sliced)
  • 1/4 medium red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 450°F (230°C). Roll out pizza dough on a floured surface to about 12 inches in diameter and transfer it to a parchment-lined baking sheet. Brush with olive oil.
  2. Bake the crust for 10-12 minutes until golden brown.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber slices, and red onion.
  4. In a small bowl, whisk together lemon juice and Dijon mustard; gradually add olive oil while whisking until emulsified.
