  • 4 beef short ribs (approximately 2 lbs)
  • 1 large yellow onion, chopped
  • 2 medium carrots, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Generously season short ribs with salt and pepper; let sit at room temperature.
  3. In a Dutch oven, heat oil over medium-high heat; sear each rib until browned on all sides.
  4. Remove ribs and sauté onions, carrots, and garlic in the same pot until softened.
  5. Stir in tomato paste; add red wine and scrape up browned bits from the pot. Pour in beef broth until ribs are submerged.
  6. Return ribs to the pot, cover with a lid, and braise in the oven for 2.5 to 3 hours until fork-tender.
