  • 6 slices thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 2 tbsp lemon juice
  • Salt & pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a skillet over medium heat, cook the bacon until crispy. Transfer to paper towels to drain.
  3. Chop the cherry tomatoes and romaine lettuce, placing them in a large mixing bowl.
  4. In another bowl, combine mayonnaise, Greek yogurt, lemon juice, salt, and pepper; mix until smooth.
  5. Add the cooled pasta and bacon to the mixing bowl with veggies. Pour the dressing over top and toss gently to coat.
