Ingredients
- 8 oz rotini pasta
- 6 slices thick-cut bacon
- 1 cup cherry tomatoes, halved
- 2 cups romaine lettuce, chopped
- ½ cup mayonnaise
- ½ cup Greek yogurt
- 2 tbsp lemon juice
- Salt & pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a skillet over medium heat, cook the bacon until crispy. Transfer to paper towels to drain.
- Chop the cherry tomatoes and romaine lettuce, placing them in a large mixing bowl.
- In another bowl, combine mayonnaise, Greek yogurt, lemon juice, salt, and pepper; mix until smooth.
- Add the cooled pasta and bacon to the mixing bowl with veggies. Pour the dressing over top and toss gently to coat.
