  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 green onions, chopped (plus extra for garnish)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp minced ginger

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, chopped green onions, garlic powder, salt, and pepper until fully mixed.
  2. Roll the mixture into golf ball-sized meatballs (about 2 tablespoons each) and place them on a parchment-lined baking sheet.
  3. Optionally, brown the meatballs in a skillet over medium heat for about 5 minutes.
  4. In another bowl, whisk together soy sauce, honey, sesame oil, minced garlic, and ginger. Pour this mixture over the meatballs in the crockpot.
  5. Cover and cook on low for about 4 hours or high for 2 hours until cooked through.
  6. Serve over rice or noodles and garnish with extra green onions.
