  • 1 cup dried black beans, soaked overnight
  • 4 oz smoked sausage, sliced
  • 4 oz chorizo, sliced
  • 4 strips bacon, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 cups low-sodium vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. Soak the black beans overnight in water.
  2. In a large pot over medium heat, cook the diced bacon until crispy. Add the smoked sausage and chorizo; brown for about 5 minutes.
  3. Stir in the chopped onion and minced garlic; sauté until onions are translucent.
  4. Add the diced bell peppers and cook for another 2 minutes.
  5. Drain the soaked black beans and add them to the pot along with vegetable broth. Bring to a boil.
  6. Reduce heat to low and let it simmer uncovered for about one hour or until beans are tender. Stir occasionally.
  7. Serve in bowls garnished with fresh cilantro.
