- 4 medium Yukon Gold potatoes, diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Wash and dice the potatoes into bite-sized pieces.
- In a skillet over medium heat, heat olive oil and sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Increase heat slightly; add ground beef, breaking it apart while cooking until browned (about 7 minutes). Drain excess fat if necessary.
- Stir in diced potatoes, seasonings, and beef broth. Mix well to coat ingredients.
- Transfer mixture to the baking dish, cover with foil, and bake for 30-35 minutes until potatoes are fork-tender. Remove foil during the last 5 minutes for a crispy finish.
