  • 4 medium Yukon Gold potatoes, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Wash and dice the potatoes into bite-sized pieces.
  3. In a skillet over medium heat, heat olive oil and sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  4. Increase heat slightly; add ground beef, breaking it apart while cooking until browned (about 7 minutes). Drain excess fat if necessary.
  5. Stir in diced potatoes, seasonings, and beef broth. Mix well to coat ingredients.
  6. Transfer mixture to the baking dish, cover with foil, and bake for 30-35 minutes until potatoes are fork-tender. Remove foil during the last 5 minutes for a crispy finish.
