- 1/2 cup all-purpose flour (for dredging)
- 2 beaten eggs (for breading)
- 1 cup panko breadcrumbs
- Oil for frying
Instructions
- Boil the eggs in cold water until hard-boiled (about 12 minutes). Cool and peel.
- Heat oil in a skillet over medium-high heat. Dredge shrimp in flour, dip in beaten eggs, then coat with panko breadcrumbs. Fry until golden brown (about 2 minutes per side).
- Cut boiled eggs in half and scoop out yolks into a bowl. Mix yolks with mayonnaise, mustard, lemon juice, salt, pepper, and paprika until smooth.
- Spoon or pipe the yolk mixture back into egg whites and top with fried shrimp.
- Garnish with paprika and serve.
