Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  2. In another bowl, beat the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour wet ingredients into dry mixture and gently fold together until just combined; lumps are okay!
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/2 cup of batter onto the skillet. Cook until bubbles form on top (about 2-3 minutes), then flip and cook for an additional minute until golden brown.
  6. Stack pancakes high on plates and top with syrup or your favorite fruits.
