  • 4 cod fillets (6 oz each)
  • 1 lb Brussels sprouts, halved
  • 4 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the halved Brussels sprouts in a bowl with olive oil, salt, pepper, and half of the minced garlic. Spread them on one side of the baking sheet.
  3. In another bowl, melt the butter and mix in lemon juice, remaining garlic, and oregano. Brush this mixture over the cod fillets and season with salt and pepper.
  4. Place the seasoned cod next to the Brussels sprouts on the baking sheet. Roast for 15-20 minutes until the cod flakes easily and the Brussels sprouts are golden brown.
  5. Serve in bowls topped with any remaining garlic butter sauce and drizzle with fresh lemon juice.
