  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • Water (as needed for sauce consistency)
  • Warm pita bread (for serving)
  • Fresh vegetables (lettuce, tomatoes, cucumbers) for topping

Instructions

  1. In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture resembles coarse sand.
  2. Form tablespoon-sized balls from the mixture and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Fry falafel balls until golden brown on all sides (about 5 minutes).
  4. In a bowl, mix tahini with lemon juice and enough water to achieve desired consistency.
  5. Stuff warm pita bread with falafel and top with fresh veggies. Drizzle generously with tahini sauce before serving.
