  • 34 boneless, skinless chicken breasts (1.52 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic.
  2. Layer the chicken breasts at the bottom of the crock pot; add chopped onion and minced garlic.
  3. Pour in fire-roasted diced tomatoes with their juices over the chicken.
  4. Sprinkle chili powder, cumin, salt, and pepper over all ingredients.
  5. Add enough low-sodium chicken broth to cover everything (about two cups).
  6. Place dollops of cream cheese on top without stirring.
  7. Cover and cook on low for about 6 hours or high for about 3 hours until the chicken is tender.
  8. Shred the chicken directly in the pot with two forks and stir until well combined.
