- 8 oz cream cheese (softened)
- 1 cup powdered sugar

- 8 oz high-quality dipping chocolate
Instructions
- In a large mixing bowl, combine shredded carrots and crushed pineapple until well incorporated.
- Add softened cream cheese, powdered sugar, cinnamon, and vanilla extract. Mix on low speed until smooth.
- Cover the mixture with plastic wrap and refrigerate for about 1 hour.
- Once chilled, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Melt the dipping chocolate according to package instructions. Dip each ball into the melted chocolate and return to parchment paper.
- Allow the truffles to cool in the fridge until the chocolate hardens (about 30 minutes). Store in an airtight container.
