  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 cup assorted candy eggs (chocolate or jelly beans)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan; bake for 10 minutes.
  3. Beat cream cheese until smooth; add sugar and sour cream. Mix in vanilla and then eggs one at a time.
  4. Pour filling over the crust; bake for 55-60 minutes until set but slightly jiggly.
  5. Cool in the oven with the door ajar for one hour, refrigerate for at least four hours, then top with candy eggs before serving.
