  • 1/4 cup granulated sugar (50g)
  • 2 teaspoons active dry yeast (7g)
  • 1 cup whole milk, warmed (240ml)
  • 4 tablespoons unsalted butter, melted (56g)
  • 2 large eggs
  • Pastry cream or jam for filling
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let sit until frothy (about 5 minutes). Melt the butter and let cool slightly.
  2. Add eggs and melted butter to the yeast mixture; stir to combine. Gradually add flour until a dough forms.
  3. Knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (about 1 hour).
  5. Roll out the risen dough on a floured surface and cut into circles. Place on parchment-lined trays to rise again for 30 minutes.
  6. Heat vegetable oil in a deep pot to around 350°F (175°C). Fry donuts until golden brown (about 2 minutes per side). Drain on paper towels.
  7. Fill with pastry cream or jam and dust with powdered sugar before serving.
