  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • Zest of 1 lemon
  • Zest of 1 lime
  • ¾ cup lemon-lime soda
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In one bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon and lime zest.
  4. Gradually add the dry ingredients to the wet mixture alternately with the lemon-lime soda, starting and ending with dry ingredients.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  6. Let cool before frosting with powdered sugar frosting or extra zest.
