- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- Juice of 1 lime
- 4 cups mixed greens (romaine and spinach)
- 1 cup shredded carrots
- 1 cucumber, thinly sliced

Instructions
- Preheat your oven to 375°F (190°C). Season chicken breasts with minced garlic and soy sauce. Bake on a parchment-lined sheet for 25-30 minutes until thoroughly cooked.
- In a bowl, whisk together soy sauce, peanut butter, rice vinegar, honey or maple syrup, and lime juice until smooth.
