Description

Crispy chickpea lettuce wraps are a healthy and delicious meal option that combines perfectly roasted chickpeas with fresh, crunchy lettuce leaves. Bursting with flavor and texture, these wraps make for an exciting lunch or light dinner.   • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 8 large romaine or butter lettuce leaves
  • 1 avocado, sliced
  • 1 tomato, diced
  • 1/2 cup shredded carrots
  • 1/2 cup Greek yogurt
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the drained chickpeas dry with paper towels. In a bowl, combine chickpeas, olive oil, cumin, paprika, garlic powder, and salt. Toss until evenly coated.
  3. Spread the chickpeas on the baking sheet in a single layer and roast for 20-25 minutes until golden brown and crispy, shaking halfway through.
  4. While roasting, wash and dry the lettuce leaves. In a small bowl, mix Greek yogurt with lemon juice; season to taste.
  5. Once roasted, fill each lettuce leaf with crispy chickpeas and top with avocado slices, diced tomatoes, shredded carrots, and a drizzle of yogurt sauce.
  6. Serve immediately for optimal freshness.
