  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. In a large pot of salted water, cook the tortellini according to package instructions until al dente (about 3-5 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in halved cherry tomatoes and cook until soft (approximately 2 minutes). Add fresh spinach and stir until wilted.
  4. Reduce heat to low, pour in heavy cream, and stir in grated Parmesan cheese until well combined.
  5. Add cooked tortellini to the skillet, mixing everything together. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is achieved.
  6. Plate generously and garnish with more Parmesan or fresh basil if desired.
