  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the Italian sausage until crumbly (5-7 minutes). Remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until soft (about 5 minutes).
  3. Pour in chicken broth and scrape up any browned bits. Stir in the cooked sausage and bring to a simmer.
  4. Add ditalini pasta and cook until al dente (8-10 minutes).
  5. Lower heat and stir in heavy cream and Parmesan cheese until melted and smooth.
  6. Season with Italian seasoning, salt, and pepper to taste. Serve hot with extra Parmesan if desired.
