  • 8 oz fettuccine or penne pasta
  • 2 cups fresh baby spinach (packed)
  • 1 cup whole milk ricotta cheese
  • Juice and zest of 1 large lemon
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and stir until wilted, approximately 2 minutes.
  4. Combine drained pasta with the sautéed garlic and spinach in the skillet. Mix in ricotta cheese along with lemon juice and zest. If needed, add reserved pasta water for desired creaminess.
  5. Season with salt and pepper to taste. Toss well to coat each noodle.
  6. Serve warm, garnished with additional lemon zest if desired.
