Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft (about 3 minutes).
- Add ground beef or turkey; cook until browned (5-7 minutes), breaking up large chunks.
- Stir in smoked paprika, cumin, salt, and pepper; cook for another 2 minutes.
- Add diced tomatoes and broth; bring to a simmer for 20 minutes.
- Fill each pepper with the meat mixture and place upright in a baking dish with remaining broth.
- Bake for about 25 minutes until peppers are tender.
