  • 3 bell peppers (mixed colors)
  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable or chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft (about 3 minutes).
  3. Add ground beef or turkey; cook until browned (5-7 minutes), breaking up large chunks.
  4. Stir in smoked paprika, cumin, salt, and pepper; cook for another 2 minutes.
  5. Add diced tomatoes and broth; bring to a simmer for 20 minutes.
  6. Fill each pepper with the meat mixture and place upright in a baking dish with remaining broth.
  7. Bake for about 25 minutes until peppers are tender.
