Ingredients

  • 1 lb lean ground beef
  • 1 cup Italian breadcrumbs
  • 1/4 cup fresh basil, chopped
  • 3 garlic cloves, minced
  • 28 oz canned whole peeled tomatoes
  • 6 cups low-sodium chicken broth
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, minced garlic, salt, pepper, and basil. Mix gently and form into one-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches until golden, about 5 minutes. Remove and set aside.
  3. In the same pot, sauté diced carrots and celery for about 3 minutes until softened.
  4. Add crushed canned tomatoes and chicken broth to the pot; stir well.
  5. Return meatballs to the pot; bring to a gentle boil then reduce heat. Simmer uncovered for about 20 minutes.
  6. Serve hot, garnished with extra basil if desired.
