- 1 lb lean ground beef
- 1 cup Italian breadcrumbs
- 1/4 cup fresh basil, chopped
- 3 garlic cloves, minced
- 28 oz canned whole peeled tomatoes
- 6 cups low-sodium chicken broth
- 2 medium carrots, diced
- 2 celery stalks, diced
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, combine ground beef, breadcrumbs, minced garlic, salt, pepper, and basil. Mix gently and form into one-inch meatballs.
- Heat olive oil in a large pot over medium heat. Brown the meatballs in batches until golden, about 5 minutes. Remove and set aside.
- In the same pot, sauté diced carrots and celery for about 3 minutes until softened.
- Add crushed canned tomatoes and chicken broth to the pot; stir well.
- Return meatballs to the pot; bring to a gentle boil then reduce heat. Simmer uncovered for about 20 minutes.
- Serve hot, garnished with extra basil if desired.
