  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs and granulated sugar until thick and pale, about five minutes.
  3. In another bowl, whisk together cocoa powder, flour, baking powder, and salt. Gently fold into the egg mixture.
  4. Pour batter into the prepared pan and bake for 12-15 minutes or until it springs back when touched.
  5. Immediately turn the cake onto powdered sugar-dusted parchment paper and roll it up with the parchment inside. Let it cool completely.
  6. Unroll the cooled cake, spread whipped cream over it, then roll it back up without the parchment. Frost with remaining whipped cream.
