  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup heavy cream (chilled)
  • 1/4 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, and baking powder.
  3. In a separate large bowl, beat eggs and sugar until thick and pale for about 5 minutes.
  4. Gently fold in melted butter followed by dry ingredients until just combined.

  6. While cooling slightly, whip heavy cream with powdered sugar until soft peaks form.
  7. Carefully roll the warm cake in a kitchen towel dusted with powdered sugar; allow it to cool completely.
  8. Once cooled, unroll, spread whipped cream inside, roll it back up, frost with more whipped cream on top, and dust with additional powdered sugar.
