  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (juiced)
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • Salt and pepper to taste

Instructions

  1. Gather all fresh ingredients and slice corn off the cob into a large mixing bowl.
  2. Finely dice the red onion and halve the cherry tomatoes; add them to the bowl with corn.
  3. Chop cilantro and mix it into the bowl.
  4. Add chopped chipotle peppers along with a few spoons of adobo sauce; stir well.
