  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 3 tbsp cocoa powder
  • 1 cup smooth tomato sauce
  • 1 cup low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Marinate chicken breasts with minced garlic, salt, and pepper for at least 30 minutes.
  2. In a medium saucepan over medium heat, combine cocoa powder, tomato sauce, chicken broth, cumin, cinnamon, and oregano. Simmer for 10 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes per side until golden brown.
  4. Pour mole sauce over the seared chicken in the skillet. Cover and simmer on low heat for 15 minutes until chicken is cooked through.
