  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup low-sodium chicken broth
  • 2 sheets puff pastry (thawed)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray. Season the chicken with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add mixed vegetables and cook until tender.
  3. Add seasoned chicken breasts, chicken broth, soy sauce, and Worcestershire sauce to the skillet. Simmer until the chicken is cooked through (about 15 minutes).
  4. Roll out puff pastry sheets on a floured surface and cut into squares.
  5. Transfer the chicken mixture to the prepared baking dish and layer puff pastry squares on top.
  6. Bake for 25-30 minutes or until golden brown and bubbly.
