  • 8 oz fresh mozzarella, sliced
  • 2 ripe heirloom tomatoes, sliced
  • 1 cup fresh basil leaves
  • 4 tbsp basil pesto (homemade or store-bought)
  • 4 slices crusty ciabatta bread
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat your panini press or skillet over medium heat.
  2. Spread basil pesto on one side of each slice of ciabatta.
  3. On two slices, layer fresh mozzarella and tomato slices, then top with fresh basil leaves.
  4. Close the sandwich with the other slices of bread, pesto side down.
  5. Grill in the panini press or skillet until golden brown and cheese is melted (about 3-5 minutes per side).
  6. Drizzle balsamic glaze on top before slicing and serving.
