  • 4 boneless, skinless chicken breasts (about 600g)
  • 1 cup red bell pepper, chopped
  • 1 cup yellow bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1 medium red onion, sliced
  • 2 medium zucchini, sliced into rounds
  • 3 tbsp olive oil (45ml)
  • 3 tbsp low-sodium soy sauce (45ml)
  • 2 tbsp honey (30g)
  • 2 tbsp freshly squeezed lemon juice (30ml)

Instructions

  1. Cut chicken breasts into bite-sized pieces and place in a bowl.
  2. In a separate bowl, mix olive oil, soy sauce, honey, and lemon juice to create the marinade. Pour over chicken and marinate for at least 30 minutes.
  3. While marinating, chop the bell peppers and slice the zucchini and onion.
  4. Assemble skewers by alternating marinated chicken and vegetables.
  5. Preheat grill to medium-high heat (375°F/190°C) and grill skewers for about 10-15 minutes until chicken is cooked through (165°F/74°C).
  6. Remove from skewers and combine all ingredients in a large bowl. Drizzle with leftover marinade or fresh lemon juice before serving.
