- 4 boneless, skinless chicken breasts (about 600g)
- 1 cup red bell pepper, chopped
- 1 cup yellow bell pepper, chopped
- 1 cup green bell pepper, chopped
- 1 medium red onion, sliced
- 2 medium zucchini, sliced into rounds
- 3 tbsp olive oil (45ml)
- 3 tbsp low-sodium soy sauce (45ml)
- 2 tbsp honey (30g)
- 2 tbsp freshly squeezed lemon juice (30ml)
Instructions
- Cut chicken breasts into bite-sized pieces and place in a bowl.
- In a separate bowl, mix olive oil, soy sauce, honey, and lemon juice to create the marinade. Pour over chicken and marinate for at least 30 minutes.
- While marinating, chop the bell peppers and slice the zucchini and onion.
- Assemble skewers by alternating marinated chicken and vegetables.
- Preheat grill to medium-high heat (375°F/190°C) and grill skewers for about 10-15 minutes until chicken is cooked through (165°F/74°C).
- Remove from skewers and combine all ingredients in a large bowl. Drizzle with leftover marinade or fresh lemon juice before serving.
