- 20 large pasta shells
- 1 ½ cups ricotta cheese
- 4 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 tsp Italian seasoning
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Boil salted water and cook the pasta shells until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted, about 3 minutes.
- In a bowl, combine ricotta cheese, sautéed spinach (cooled), Parmesan cheese, Italian seasoning, salt, and pepper.
- Fill each shell with about 2 tablespoons of the mixture and place them seam side up in a greased baking dish.
- Pour marinara sauce over the shells and sprinkle additional Parmesan on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden brown.
