  • 6 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add 2 tsp olive oil and sauté the chopped onion until translucent (about 5 minutes). Add spinach and cook until wilted.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Combine the sautéed vegetables with the egg mixture and half of the cheese in a greased baking dish. Top with remaining cheese.
