  • 2 medium onions, chopped
  • 5 cloves garlic, minced
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 4 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano (preferably Mexican)

Instructions

  1. Prepare the Chilies: Remove stems and seeds from the dried chilies and soak them in hot water for about 15 minutes until softened.
  2. Blend Sauce Ingredients: In a blender, combine soaked chilies, garlic, cumin, oregano, half of the onion, and 1 cup of beef broth. Blend until smooth.
  3. Sear the Meat: In a large pot or Dutch oven over medium-high heat, sear the tri-tip roast on all sides until browned.
  4. Add Onions and Sauce: Stir in the remaining chopped onion and blended sauce. Pour in the rest of the beef broth and bring to a gentle simmer.
  5. Slow Cook: Cover and simmer on low heat for about three hours until the meat is tender and easily shreds with forks.
