Ingredients

Scale
  • 2 lbs medium Idaho potatoes, diced
  • 1 whole head of garlic
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh herbs (optional), such as rosemary or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the top off the head of garlic, drizzle with olive oil, sprinkle with salt, wrap in foil, and set aside.
  3. Wash and dice Idaho potatoes into even bite-sized pieces.
  4. In a large bowl, toss the diced potatoes with olive oil, salt, pepper, and optional fresh herbs until well coated.
  5. Spread the potatoes on a baking sheet lined with parchment paper; ensure they have space between them for even crisping.
  6. Place both the wrapped garlic and baking sheet in the oven and roast for 25-30 minutes or until golden brown and crispy, tossing halfway through cooking.
