Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, beat cream cheese until smooth. Gradually add sugar while mixing well.
- Stir in pumpkin puree and eggs one at a time, mixing thoroughly after each addition. Add cinnamon and nutmeg; mix until creamy.
- Pour filling over the crust and bake for 40-45 minutes until edges are set but center is slightly jiggly.
- Allow to cool completely before refrigerating for at least two hours. Slice into bars and serve.
