Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp grated nutmeg

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared baking dish to form the crust.
  3. In a separate bowl, beat cream cheese until smooth. Gradually add sugar while mixing well.
  4. Stir in pumpkin puree and eggs one at a time, mixing thoroughly after each addition. Add cinnamon and nutmeg; mix until creamy.
  5. Pour filling over the crust and bake for 40-45 minutes until edges are set but center is slightly jiggly.
  6. Allow to cool completely before refrigerating for at least two hours. Slice into bars and serve.
