  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries (plus extra for garnish)
  • 2 tbsp edible lavender flowers

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press one tablespoon into each muffin cup lined with paper liners.
  2. Beat cream cheese until smooth. Add sugar, vanilla, and lavender; mix until creamy.
  3. Gently fold in blackberries. Spoon filling into crusts, filling each about three-quarters full.
  4. Bake for 20-25 minutes or until set but slightly jiggly in the center. Cool for one hour at room temperature, then chill in the fridge for at least two hours before serving.
