Ingredients

  • 2 lbs fresh Roma tomatoes (or San Marzano)
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the ingredients by washing and quartering the tomatoes. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add garlic and stir until fragrant (about 1 minute).
  3. Add the quartered tomatoes along with salt and pepper. Stir well and let simmer for 20-30 minutes until thickened.
  4. Blend the sauce using an immersion blender or regular blender until smooth.
  5. Return to low heat, stir in fresh basil, and simmer for another 5 minutes before serving.
