  • 4 medium sweet potatoes (about 2 lbs), peeled and sliced into ½ inch rounds
  • 1 cup brown sugar (light or dark)
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tsp vanilla extract
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a bowl, combine brown sugar, cinnamon, nutmeg, and vanilla extract.
  3. Layer half of the sweet potato slices in the baking dish. Drizzle with half of the melted butter and sprinkle half of the sweet mixture over them.
  4. Repeat layering with remaining sweet potatoes, butter, and sweet mixture.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until tender and caramelized.
