- 1 can (15 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 large sweet onion, diced
- 4 cloves garlic, minced
- 1 tsp cumin
- ½ tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
Instructions
- Season the pork shoulder with smoked paprika, cumin, salt, and pepper. Let it sit at room temperature for about 30 minutes.
- Preheat the smoker to 225°F (107°C). Smoke the pork for approximately 6 hours or until it reaches an internal temperature of 200°F (93°C).
- In a large pot over medium heat, sauté diced onions in oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Shred the smoked pork using two forks and add it to the pot along with diced tomatoes and kidney beans. Mix well.
- Simmer on low heat for about 20 minutes to let the flavors meld together.
