- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large fresh lemons (zest and juice)
- 2 large eggs
- 1 tsp baking powder
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a mixing bowl, combine flour and granulated sugar. Cut in cold butter until the mixture is crumbly. Press firmly into the bottom of the prepared pan.
- Bake for about 15 minutes or until lightly golden.
- While the crust bakes, whisk together eggs, granulated sugar, lemon juice, lemon zest, flour, and baking powder until smooth. Pour over the baked crust.
- Return to the oven and bake for another 20-25 minutes until set.
