  • 1 lb lean ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 4 medium russet potatoes, thinly sliced
  • 1 medium onion, finely chopped
  • 1/2 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a large bowl, mix together ground beef, breadcrumbs, eggs, onion, ketchup, garlic powder, paprika, salt, and pepper until well combined.
  3. Layer half of the sliced potatoes at the bottom of the prepared baking dish.
  4. Spread the meatloaf mixture over the potatoes and top with remaining potato slices.
  5. Cover with foil and bake for 45 minutes. Remove foil during the last 15 minutes and sprinkle cheese on top for the final five minutes until melted.
  6. Let rest for about 10 minutes before serving to retain moisture.
