  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (any color, diced)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • ½ cup shredded cheddar or feta cheese (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes. Toss them with olive oil, cumin, paprika, salt, and pepper, then spread on a baking sheet.
  3. Roast the sweet potatoes in the oven for 25-30 minutes until fork-tender.
  4. In a large skillet over medium heat, add olive oil and sauté onion, bell pepper, and garlic until soft (about 5 minutes).
  5. Add ground beef to the skillet, breaking it apart while cooking until browned.
  6. Once the sweet potatoes are done roasting, stir them into the beef mixture and combine well.
