  • 8 oz goat cheese log
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil

Instructions

  1. Prepare your breading station by setting out three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs.
  2. Cut the goat cheese log into thick rounds (about half an inch).
  3. Dredge each slice in flour, shaking off the excess.
  4. Dip the floured slices into the beaten eggs to ensure they are well-coated.
  5. Roll each slice in panko breadcrumbs until fully coated.
  6. Heat olive oil in a skillet over medium heat. Once shimmering, add the coated goat cheese rounds and fry for about 2 minutes on each side or until golden brown.
  7. Transfer to paper towels to drain excess oil and serve hot.
