  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fusilli or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 4 oz feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Grill seasoned chicken breasts over medium heat for about 6 minutes per side until cooked through. Allow to cool before slicing.
  2. Boil salted water and cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  3. Chop the cucumber, halve the cherry tomatoes, and slice the red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper for the dressing.
  5. In a large bowl, combine sliced chicken, cooled pasta, chopped veggies, and feta cheese. Drizzle with dressing and toss gently to coat.
