  • 4 boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with Cajun seasoning and sauté until golden brown on both sides (about 5 minutes each). Remove chicken from pot and set aside.
  2. Add fettuccine to the same pot along with chicken broth and enough water to cover the pasta. Bring to a boil, then simmer until al dente (approximately 8 minutes), stirring occasionally.
  3. Once the pasta is cooked, pour in the heavy cream while stirring gently. Gradually add grated Parmesan cheese until melted and combined into a smooth sauce.
  4. Return the sautéed chicken to the pot with its juices and let it simmer for another 2 minutes on low heat to combine flavors.
  5. Serve immediately, garnished with chopped parsley.
