  • 1 tsp coriander
  • 2 tbsp extra virgin olive oil (for sautéing)
  • 2 tbsp extra virgin olive oil (for dressing)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the couscous: In a medium saucepan, bring vegetable broth to a boil. Remove from heat, stir in couscous, cover tightly, and let sit for about 5 minutes.
  2. Sauté the vegetables: Heat olive oil in a large skillet over medium-high heat. Add chopped mixed vegetables and sauté until tender-crisp, about 6 minutes. Stir in cumin and coriander.
  3. Add chickpeas: Add drained chickpeas to the skillet and stir gently until heated through, about 3 minutes.
  4. Fluff the couscous: Fluff the couscous with a fork and mix it into the vegetable-chickpea mixture until well combined.
  5. Dress it up: Whisk together lemon juice, remaining olive oil, salt, and pepper in a small bowl. Drizzle over the couscous mixture and toss gently.
