- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1/4 cup low-sodium soy sauce
- 2 tbsp fresh lemon juice
- 1 cup long-grain white rice
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Finely chop the garlic and season the chicken breasts with salt and pepper.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken for about 6 minutes on each side until golden brown; remove from skillet.
- In the same skillet, add the remaining butter and minced garlic; sauté until fragrant. Stir in lemon juice and soy sauce, scraping up any browned bits.
- Meanwhile, cook rice according to package instructions. Once done, stir in grated parmesan cheese until melted.
- Slice the cooked chicken and return it to the skillet with the sauce; let it simmer for a couple of minutes.
- Serve the chicken over garlic parmesan rice, drizzled with extra sauce.
