  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup grated carrots (about 2 medium carrots)
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup crushed Oreos (for decoration)
  • Gummy worms (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, beat the eggs with vegetable oil and vanilla extract until frothy. Mix in the grated carrots.
  4. Combine wet and dry ingredients until just mixed; avoid over-mixing.
  5. Pour the batter into the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating cream cheese with powdered sugar until smooth. Spread on cooled brownies.
  7. Top with crushed Oreos for ‘dirt’ and place gummy worms decoratively.
